Summer Salad with Figs and Cactus Fruit
Ingredients
- 50 g arugula (rocket)
- 2 fresh figs
- 1 cactus fruit (prickly pear)
- 50g blackberries
- 5-6 edible flowers (optional)
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon chopped pistachios
- Pinch of salt
Instructions
- Wash and gently dry the arugula, blackberries, and edible flowers.
- Cut the figs into quarters.
- Carefully peel the cactus fruit (prickly pear) by cutting off both ends, making a slit down the side, and peeling back the skin. Cut the flesh into circles.
- Arrange the arugula evenly on two plates.
- Distribute the figs, cactus fruit, edible flowers and blackberries over the arugula.
- Drizzle the honey-olive oil mixture over the salad.
- Add a pinch of salt and the chopped pistachios.
- Enjoy.
