These cheese and chive biscuits are a tasty, homemade treat. They're quick to make and perfect for a snack or a delicious appetizer.
Biscuits are a beloved comfort food that bring warmth and satisfaction to any table. They're simple to make and incredibly versatile. Whether enjoyed at breakfast, as a snack, or paired with a meal, biscuits have a special place in many homes. They can be soft and flaky, or crisp and crumbly, depending on how they’re made.
One of the best things about biscuits is how easily they can be customized. You can keep them plain or add ingredients like cheese, herbs, or even fruit to suit your taste. Biscuits are also great for soaking up gravy, spreading with butter and jam, or just eating on their own.
Another wonderful thing about biscuits is how quick and easy they are to prepare. With just a few basic ingredients—flour, butter, milk, and baking powder—you can whip up a batch in no time. They’re perfect for when you want something homemade but don’t have a lot of time to spend in the kitchen.
What’s the difference between biscuits and scones?
While biscuits are made with flour, butter, milk and baking powder, scones often include eggs in the dough. There is a difference in the texture as well. Biscuits are lighter and flakier, while scones are more dense and crumbly.
Biscuits are usually smaller than scones. They are cut out into round shapes, and served as a savory dish or as a side dish with gravy or butter. Scones is often cut into triangles and it is more on the sweeter side, flavored with fruits and jam.
Tips for add-ins
Roasted garlic: Adding garlic can make your biscuits even more flavorful than they already are.
Herbs: You can easily incorporate your favorite herbs into the dough, like rosemary, thyme, chives (like in this recipe) or even basil.
Olives: Adding olives to the dough can complement the buttery biscuits deliciously.
Jalapeños: Add diced jalapeños for some heat.
Bacon: Adding bits of cooked bacon gives a smoky, salty flavor that pairs wonderfully with the buttery biscuits.
In my opinion, the best add-ins for biscuits are savory ingredients like cheese, herbs, garlic, and bacon. Each of these add-ins can be tailored to suit your taste and the occasion, making your biscuits more flavorful and unique.
Ingredients you will need for this recipe:
All-purpose flour: Make sure to use all-purpose flour instead of bread flour. Using bread flour can change the texture of the biscuits.
Baking powder: Helps the biscuits rise as they bake.
Butter: For recipes like biscuits, I like using salted butter because it enhances the flavor.
Cheese: You can use whatever cheese you prefer. In this recipe, I used Emmentaler cheese. Make sure you grate your finely.
Potatoes: Yes, I know traditional biscuits do not include potatoes in their dough. This is a personal preference of mine, because I find that potatoes improve the flavor of the biscuits and give them a moist and soft texture.
Chives: One of my favorite add-ins.
Milk: Using whole milk brings the dough together and helps them become soft and tender.
Salt: If you’re using salted butter, you won’t need to add too much salt to dough. If you’re using unsalted butter, I would recommend to double the salt.
Extra Ingredients:
Melted butter: You will need melted butter to brush the top of the biscuits before baking them.
Step by step instructions with pictures:
1. First, you are going to prepare the potatoes. Peel the potatoes and boil them in slightly salted water until fork tender. This should take about 15 to 20 minute. If you dice up the potatoes into small cubes, the cooking time can significantly lower. Once they are tender, take them out the water and with the help of a fork mash them, then set aside for 5 minutes to cool.
2. Before we start working on the dough, preheat your oven to 200C and line a baking sheet with baking paper.
3. Now, time to work on the dough.You can make the dough by hands or by using a stand mixer.
4. Making the dough by hands – In a large bowl whisk together the flour, salt and the baking powder. Then add the cubed butter and with your fingers start working the butter into the flour until it resembles crumbs. Next, add the cheese, chives and the mashed potato and stir everything together with a wooden spoon. Once you’re done with that, pour in the milk. Now you can start kneading the dough. You don’t have to knead too much, just until you get a soft, manageable dough.
5. Making the dough using a stand mixer – In a large bowl whisk together the flour, salt and baking powder. Then add the cubed up butter and using a paddle attachment mix it for about 3 minutes on low, until it looks like coarse crumbs. Then mix in the chives, cheese and mashed potatoes for about 30 seconds. Lastly, add the milk to the dough and let it mix for about a minutes or two until you get a manageable dough.
6. Place the dough onto a lightly floured surface and flour the top. Using a roll pin, roll the dough into a 25x25cm square.
7. Now time to layer it. Cut the rolled out dough in half horizontally and place one part on the other. Then cut in half again, but this time vertically. Place all four parts on top of each other. (See picture below)
8. Start rolling the dough again, this time into a 20x20cm square, about 2 cm thick.
9. Use a round cookie cutter to cut out the biscuits. Gather any remaining dough, reshape and cut more biscuits as needed.
10. Place the biscuits on the prepared baking sheet, brush them with melted butter and sprinkle some more cheese on top.
11. Bake in the preheated oven for about 15 minutes, or until golden brown.
12. Once baked, let them slightly cool and enjoy!

- 250g all-purpose flour
- 7g baking powder
- 65g salted butter, cut into cubes
- 125g finely grate cheese, I used Emmentaler cheese
- A handful of chives, chopped up
- 105g milk
- 20g melted butter for brushing the top
- Extra grated cheese for topping
