It is not only delicious, but it is quick, meaning you don’t have to spend hours in the kitchen to make it. Personally, I like having French toast during the fall-winter months, as it brings me warmth and comfort during the cold, rainy mornings.

Ingredients you will need for this recipe:
For the batter:
- Bread: The best type of bread to use for this recipe is Japanese Milk Bread or Brioche Bread.
- Eggs: You will need two whole eggs.
- Heavy Cream: Enriches the custard, giving it a richer and creamier texture.
- Milk: Milk is the one of the key ingredients in French toast that helps create the custard mixture.
- Sugar: Adds a bit of sweetness to the custard.
- Vanilla: Elevates the flavor of the dish.
- Cinnamon: Adds a cozy, warm and aromatic element to the dish.
- Tonka Bean (optional): This is optional, but it adds and exotic and unique flavor to the batter. It has notes of vanilla and almonds.
- Butter: for cooking.
For the Maple-Brown sugar Mascarpone Cream:
- Mascarpone Cream Cheese: Make sure the mascarpone cream is softened and at room temperature, in order to be easily spreadable.
- Brown Sugar: Adds a rich, caramel-like sweetness to the cream.
- Maple Syrup: Adds a natural sweetness and a woody flavor to the cream.
For the Caramelized Pears:
- Pears: One of the main elements of the dish.
- Brown Sugar: Enhances the caramelization process, giving the pears a deeper color and a rich sweetness.
- Cinnamon: Enhances the pears by adding a warm, spicy flavor to them.
- Butter: needed for caramelizing.
How to make French Toast:
1. First prepare the Maple-brown sugar mascarpone cream, in order to be ready, as soon as the French toast is done.
2. In a small bowl mix together the soft mascarpone cream cheese with the brown sugar and the maple syrup until everything is fully combined and creamy. Once ready, set aside and place it in fridge.
3. Next make the caramelized pears. First slice up the pears. In a skillet, melt the butter over low to medium heat. Add the slices of pears; sprinkle the brown sugar and the cinnamon over them. Cook for a few minutes until the pears are tender and caramelized. This should take about 5 to 7 minutes. Make sure to turn the pears a few times while cooking. Once ready, take them out of the skillet and set them aside.
4. Now make the French toast: In a medium bowl whisk together the eggs, heavy cream, milk, sugar, vanilla extract, ground cinnamon and grated tonka bean until well combined.
5. Soak each brioche in the mixture and cook them in about a tablespoon of butter for 2-3 minutes on each side, or until they turn golden brown.
6. Once ready, it’s time to assemble. Place the caramelized pears on top of the French toast, and then add the mascarpone cream. Optionally, top with more maple syrup. Decorate with edible flowers and powdered sugar.

Ingredients
- 4 thick slices of brioche bread
- 2 large eggs
- 85g heavy cream
- 85g milk
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon grated Tonka Bean (optional)
- 125g mascarpone cheese, softened
- 40g brown sugar
- 25g maple syrup
- 2 pears, sliced
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 2 tablespoon of butter (for caramelizing)
Instructions
- First make the cream: In a small bowl, mix together the mascarpone cream cheese, brown sugar and maple syrup until creamy and smooth. Once ready, set aside.
- Caramelize the pears: Slice up the pears and set aside.
- In a skillet, melt the butter over low to medium heat. Add the pear slices and sprinkle the granulated sugar along with the cinnamon on top. Cook, stirring and turning occasionally, until the pears are tender and caramelized, about 5-7 minutes.
- Make the French toast: First prepare the batter by whisking together the eggs, milk, heavy cream, vanilla extract, ground cinnamon and optionally the grated Tonka bean.
- Soak each brioche in the mixture and cook each slice in a tablespoon of butter for 2-3 minutes or until golden brown.
- Once ready, time to assemble. Place the caramelized pears on the French toast slices, then top with the mascarpone cream.
- Decorate with edible flowers, powdered sugar and more maple syrup.
- Enjoy.
