If you love tiramisu, these pancakes will be your new favorite breakfast. They’re soft, fluffy, and layered with a creamy mascarpone filling and just the right amount of coffee flavor. Best of all, they’re super easy to make, so you don’t need any special skills to whip up a batch. If you love coffee-flavored desserts, you’re going to be obsessed with these.
The pancakes are made with simple ingredients, but the mascarpone filling takes them to the next level. I like to dust mine with cocoa powder, just like real tiramisu, for that extra touch. You can also drizzle them with chocolate sauce. No matter how you serve them, they always turn out delicious.
If you’ve never tried tiramisu in pancake form, this is your sign to do it. You get that creamy mascarpone, the hint of coffee, and the soft pancakes all in one bite.
Notes:
Don’t Overmix the Batter – Stir just until combined. A few lumps are fine! Overmixing makes pancakes dense instead of fluffy.
Medium Heat is Key – Too high, and the pancakes will burn before cooking through. Too low, and they won’t get golden brown.
Sweetness is Adjustable – If you like a sweeter pancake, add a little more sugar to the batter or mascarpone filling. If you prefer less sweetness, reduce it slightly.
Frequently asked questions
1. Do I need to use mascarpone?
Yes, mascarpone gives the filling that classic tiramisu flavor and texture.
2. Can I make these pancakes ahead of time?
Yes but the texture will be different, so for this reason I recommend eating them fresh.
3. How do I keep my pancakes fluffy?
Don’t overmix the batter! Stir until just combined, and let it rest for a few minutes before cooking. Also, cook on medium heat to avoid overbrowning.
Ingredients you will need for this recipe:
For the pancake batter:
All purpose flour: All-purpose flour is the main structure builder in your pancake batter.
Baking powder: Baking powder is a leavening agent that helps the pancakes rise.
Instant coffe: Instant coffee adds that signature coffee flavor to the pancakes, giving them the classic tiramisu taste.
Granulated sugar: Granulated sugar sweetens the batter, balancing the slight bitterness of the coffee and making the pancakes more flavorful.
Egg: Eggs bind the batter together and provide structure to the pancakes.
Milk: Milk adds moisture to the batter and helps thin it to the right consistency for pouring. It also adds a mild richness and a soft, tender texture to the pancakes.
Melted Butter: Melted butter adds richness and flavor to the pancake batter. It also helps create a softer, fluffier texture by making the pancakes tender and not too dense.
For the mascarpone cream:
Mascarpone cream cheese: Mascarpone is a rich, creamy cheese with a smooth texture and slightly sweet flavor, making it a perfect base for the tiramisu inspired filling.
Granulated sugar: Granulated sugar sweetens the mascarpone filling.
Heavy whipping cream: Heavy whipping cream is key to making the mascarpone filling light and fluffy. When whipped, it adds volume and a smooth, airy texture to the filling.
Vanilla extract or vanilla bean paste: Vanilla extract or vanilla bean paste adds a warm, aromatic sweetness to the mascarpone filling.
Directions:
1. For the batter whisk together the flour, baking powder, sugar and instant coffee.
2. Then add the egg along with the milk and mix until just combined. Overmixing the batter can lead to a though pancake. It’s okay if it’s lumpy.
3. Lastly, mix in the melted butter.
4. Using an ice cream scoop or a laddle, scoop portions of batter (60g) in a buttered pan, and cook over medium heat until bubbles appear on the top. Then flip and cook for an additional minute or two.
5. For the cream beat together the mascarpone with the sugar until smooth and creamy.
6. Then pour in the heavy cream along with the ground vanilla and keep mixing until fluffy.
7. Assemble and enjoy.
