This Mediterranean-inspired chicken salad is a fresh, flavorful dish that's perfect for a light lunch or dinner.

I wanted to make a salad that was both satisfying and packed with Mediterranean flavors, so I put together this chicken salad using simple ingredients I had on hand. I started with grilled chicken breast for the protein, then added a mix of fresh greens for the base. Cherry tomatoes, Kalamata olives, and creamy avocado brought in some great textures and flavors. To give it a little kick, I sprinkled some chili flakes, and for extra flavor, I added crumbled feta and a few spoonfuls of olive tapenade. The result was a hearty, flavorful salad that’s perfect for any meal.

Ingredients you will need for this recipe

  • Chicken breast: For this salad I personally like using chicken breast. If you prefer boneless chicken thighs you can definitely use that, but the cooking time will be longer.

  • Mixed salad greens: Use your favorite mix of green salad.

  • Cherry Tomatoes: Cherry tomatoes add a burst of juiciness and a sweet, tangy flavor to the chicken salad.

  • Avocado: Adds a creamy texture to the salad.

  • Feta cheese: Enhances the flavor of the dish.

  • Olive Tapenade: In this recipe, we will be using Olive Tapenade as a dressing for the salad.

  • Kalamata Olives: You can also use green or black olives if you prefer those.

  • Lemon: Lemon juice adds a bright, zesty acidity to the chicken salad, which helps to balance the richness of the avocado and feta.

  • Olive oil: Olive oil is used int he chicken marinade.

  • Seasonings: I used the following seasonings – sweet paprika, garlic powder, onion powder, cumin, salt and pepper.

Step by step instructions:

1. First you’re going to prepare the chicken. In a small bowl mix together all the seasonings and the olive oil, and then rub this mixture onto the chicken until it’s evenly coated.

2. Cook the chicken breast over medium heat until fully cooked. The internal temperature of the chicken should be 75C. Once ready, let it rest for 2 minutes before slicing.

3. Now, let’s assemble the salad. Add the mixed salad greens to a bigger bowl along with the Olive Tapenade and the lemon juice. Mix until the salad is evenly coated with the Olive Tapenade. Then add the halved cherry tomatoes, the avocado, olives and sliced chicken.

4. Lastly, add the crumbled feta on top along with some chili flakes.

5. Enjoy.

Ingredients

For the salad
  • 150g chicken breast
  • 50g mixed salad greens
  • 8 cherry tomatoes
  • half or a whole Avocado
  • 25g Feta, crumbled or cut into cubes
  • 2 tablespoons of Olive Tapenade
  • 4-5 Kalamata Olives
  • Juice of half a lemon
  • A pinch of chili flakes
For the chicken seasoning
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of sweet paprika, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 1/4 teaspoon ground cumin
  • 1/2 teaspoon of salt (adjust to taste)
  • Pepper to taste
